I woke up realising that Christmas is upon us. This is a good thing. Christmas is a really big deal for me. It has been right from my childhood. I woke up thinking of the menu for Christmas, the spicy jollof rice, pounded yam and afia efere, goat meat pepper soup and all the good things of life. Well, I started thinking of the drinks and how to do things a little different and I decided on having exotic cocktails. 
I have the recipe here for a pineapple mint frappe. You can comfortably serve this to your pastor and your parents. It is also delicious enough for your friends.
Why not wow your guests this Christmas with this healthy mocktail?
Ingredients
1 cup diced pineapple
½ cup chopped mint
1 cup pineapple juice
½ cup ice
Sugar and lime wedge to garnish
Method

Add the diced pineapple, mint, pineapple juice and ice in a blender and blend.
Wet the outside rim of the glass with a wedge of lime and place upside down on a plate of sugar to coat the rim of the glass (aesthetic purpose).
Pour the blended pineapple into the glass
Garnish with a pineapple plant leaf or wedge of pineapple.

Cocktail Recipe: Watermelon – Mint Margarita

Having friends over for a small party and wondering what drink to serve? This drink is a fun fruity twist to the traditional Margarita, and I am sure you and your friends will love it. Enjoy!
Ingredients
4 cups Watermelon; seeded and chopped
¼ cup Fresh lime juice (about 3 limes)
¼ cup Sugar
½ cup Tequila
1 tbsp lime rind; grated
2 tbsp fresh mint leaves; chopped
Salt
Procedure

Cut up the watermelon into small pieces and remove the seeds
Place the cut watermelon on a baking sheet and freeze until firm
Blend the frozen watermelon, tequila, lime rind, lemon juice, mint leaves and sugar in a blender until it is slushy
Coat the rims of cocktail glasses with lime juice and dip in salt
Pour the blended slush into the cocktail glasses
Garnish with mint leaves
Serve

Tips

You could substitute the tequila with ½ cup of Orange juice or Apple juice to make a great Mocktail

Whether planning a big do, or a small get-together with close friends and family, there should be something tasty and unique to make your bash as merry as ever. Unfortunately, with the merrymaking usually comes lots of beer and alcoholic drinks. But the fun isn’t only for liquor lovers, is it? So while planning, do include this cheerful refreshing non-alcoholic treat to make everyone feel special (even the kids can have a taste of this).
This version of Shirley Temple is delicious, simple and super-fast to mix up – a twist to the regular off-the-counter drinks. And it’s alcohol-free! Named after much-celebrated child actress Shirley Temple, this classic drink is perhaps the most famous non-alcoholic drink in bars and restaurants around the world. History has it that a bartender created the drink for her while out dining with her parents on her 10th birthday many many years ago.
All that’s needed are usually three ingredients – Grenadine, Ginger ale and maraschino cherries. For varieties, Ginger-ale can be substituted with lemon-lime soda (Sprite/7up, fresh lemonade) or fresh orange juice.
This recipe will use fresh orange juice and some fresh ginger for that refreshing tart taste.

Ingredients:

35cl Grenadine syrup
2litres fresh orange juice
1 Tbsp peeled, grated fresh ginger root
Ice cubes
Maraschino cherries and orange slices for garnish (optional)

 
***Quantity can be increased or decreased depending on the number of servings needed.
 
Directions:
In a pitcher, stir the grated ginger into orange juice. Ensure to combine thoroughly.
Next, place ice cubes into glass cups (preferably use plastic cups if serving kids), add a teaspoon of grenadine in each cup and top off with the mixed orange ginger juice.
Stir once and garnish with cherries and orange slices.
Serve!
 
***Do not stir if desiring the sunrise effect.
***For more spice, extra slices of fresh ginger can be dropped into the glasses.
